Veggie Enchilada Casserole

Hi Friends! Henry and I have been eating out a ton the last 2 months and we are finally trying to reign it in and get some semblance of a schedule back in our lives. Along with this comes a major need for healthy meals and green veggies in our life. I have truly fallen off the wagon and today was the first day back on the healthy train. 

I found this recipe on Skinnytaste and knew I had to make it. The only thing I did differently is use canned enchilada sauce, which was still delicious and definitely cut down on time. I loved it and had enough left-overs for lunch all week. I served it with sour cream and hot sauce - so good and only around 237 calories a serving.
