Broccoli Chicken and Cheese Casserole

With the cold weather coming in I have been craving comfort foods - casseroles, soups, crockpot meals. Henry has been asking for a classic broccoli and chicken casserole and I found a dupe for a Cracker Barrel version on Pinterest. I mean ritz crackers and tons of cheese you really can't got wrong right? The answer is no you can't! It's a super easy recipe and quite simply delicious. On a cold winter night this casserole is now going to be a Johnston staple. 


4 boneless skinless chicken breasts

salt and pepper on chicken to taste 

1 cup milk

1 can cheddar cheese soup 

1/2 teaspoon paprika

6 ounces shredded cheddar cheese

8 ounces frozen chopped broccoli, defrosted

1.5 cups crushed Ritz crackers


Preheat oven to 350 and grease casserole dish

Season chicken and lay in casserole dish

In a bowl mix the milk, soup, cheese, and paprika

Layer 1/2 the cheese mix on top of chicken

Spread broccoli on top and then top the broccoli with remainder of cheese mixture

Top with the ritz crackers and bake for 45 minutes
