Honey Pecan and Cranberry Granola

I buy granola all the time and have been threatening making my own for months and now that I have done it there is no going back. It is so easy and I had 90%of  the ingredients I needed already in my pantry. This recipe baking in my oven made my whole house smell like Fall - so warm and welcoming. I may never buy store bought again. 

I plan on eating my granola in the mornings for breakfast with yogurt but there are tons of ways you can eat it - it's pretty tasty on its own as well. I also love it mixed with fresh fruit! The crispness of the oats and pecans mixed with the cranberries is the perfect mix of sweet and salty. It is so delicious. 


3 cups of old fashioned oats 
1 3/4 cups pecans
1/3 cup honey 
3 tablespoons unsalted butter  melted 
Dash of salt 

*1 cup cranberries mixed in after everything is cooked 

Mix all ingredients together and lay out on parchment and pan. Bake at 300 for 15 minutes - take out and mix granola to bake the other side. Bake for 15 minutes. Take out and let cool. Once cool mix in cranberries and store in air-tight containers. It will stay fresh for 3-4 weeks.
